It was a really busy weekend for the Lances! Christopher and I both worked all weekend and still somehow managed to go house hunting and cook dinner both nights. I just had to share the recipes with you because they’re so good and so simple and easy.
I’m actually shocked I managed to cook both nights considering we’ve been eating out so much. I do enjoy cooking and find it to be fun and relaxing but ever since I got pregnant I don’t want to eat anything I make. It was so nice to finally be in the kitchen again and eat dinner at home. I wasn’t tempted to throw everything out and drag Christopher out to a restaurant for once. So trust me when I say these recipes are really good!
Saturday night I made spaghetti with creamy tomato basil sauce. The recipe calls for tortellini but I used gluten-free spaghetti instead (I have Celiac disease). You can use any pasta and it’ll probably be good as a risotto dish, too (gotta try that next time). This was my first time making this dish and it was so delicious I’m definitely including it in our dinner rotation.
I also prepared a NY strip since Christopher loves steak and I felt bad he hasn’t been getting many home cooked meals in the past 5 months. Steak was seasoned with just s&p and cooked medium rare for him and well done for me (and Baby).
This cookbook is so old but it’s still one of my go-tos. I dusted it off to make one of my favorite side dishes:
Hasselback potatoes! Sunday night after a long day of shooting and house hunting, I decided to make one of my favorite meals for dinner and these potatoes are almost as good as fries. Almost. You can find this recipe anywhere online but I always use Nigella Lawson’s recipe since that’s what I used the very first time I made them. The prep takes some time but the rest is so simple.

Steak again for my husband. I decided to spoil him this weekend. ;)
Please believe me when I say this tastes soooo much better than it looks. It’s grilled steak with onion-bleu cheese sauce (recipe here). I’ve been making this dish for many years and have eaten it many times and I still can’t get enough. Again, so easy and a great dish to impress people with. I added baby spinach to the sauce to make it a bit healthier. There definitely weren’t any leftovers last night, unfortunately.
